Always following the path of low interventions to express the Thracian terroir, the Assyrtiko blend with a dash of Malagousia is spontaneously fermented in old oak, where it matures for 6 months. Assyrtiko 90% and Malagousia 10%, with the latter giving an additional aromatic element. On the nose Assyrtiko’s minerality is coming out in front and complemented by a fantastically integrated oak that gives a creamy character on the palate.
