A unique rosé wine that has been fermented with native yeasts, aged in French second-use barrels (500 liters) for 4 years and stored in the producer’s cellar for 8 years. Rosé de Xinomavro 2007 is the new creation of the ever pioneer Apostolos Thymiopoulos. The grapes come from the mountain Fitia, the coldest vineyard of Naoussa, thus ensuring the high acidity and freshness of the fruit.
Light orange color, with brick highlights. The complexity in the nose is magical, there are red fruits, sun-dried tomatoes, ripe peaches, thyme, lavender, framed exceptionally by cinnamon, nutmeg, with notes of chamomile to follow. In the mouth it is of moderate volume, with high acidity and excellent balance. An intense feeling of oiliness and the gentle tannins compose a delicious and elegant whole. Long lasting aftertaste that persists. Rare wine to enjoy!
